Bellingham's long-standing community food co-op has a deli and hot food bar that sells fresh, organic, fair-trade and guilt-free food. Vegetarian- and vegan-friendly dishes like tofu scrambles, chimichurri yams and steamed veggies make regular appearances. You can eat here or take-out. Just across Holly Street, the Coop Bakery (open 7am to 7pm) has espresso drinks, smoothies and tempting pastries – all organic, of course.
