If you're tempted to try ceviche in the Andes just once (many advise against it, because with the fish coming from the coast it is not as fresh) make it at this suave modern place a short hop from the Plaza de Armas. The restaurant has been around for decades, but only recently garnered this great location.

Take a deep breath and sign up for the 'trio', including chicharrón (deep-fried pork), arroz chaufa (Peruvian-Chinese fried rice) and ceviche. Live music on weekends.
