El Cabildo

Historic hotel in Cajamarca

Like a favorite old sweater, El Cabildo is a pleasantly lived-in colonial abode that has retained a bit of its old mustiness but added plenty of style: there's elegantly carved wooden balustrades, charred brick fireplaces, a lounge area with dented armchairs and a courtyard splashed with natural greenery. The better rooms have mezzanine floors, decent art and deluxe bedding.
