Dirk Ludwig, a butcher from Hesse, Germany, has been contracted by an exclusive restaurant to produce luxury sausages made from Japanese Kobe beef.
The meat, which costs between €300 and €500 per kilo, is prized for its delicately marbled appearance and because it's so tender, and Mr Ludwig says it took several attempts to get the sausage recipe just right. But news of Ludwig's special bratwurst hasn't been well received by everyone. Chef Michael Böhnkehef, of Berlin's Grill Royal, says that turning Kobe beef into sausages completely misses the point of using the speciality meat at all.
