It takes a lot of effort to break the Guinness World Record for roast pork but chefs in Mexico’s Yucatán region are determined to regain their claim to fame after being bested by a Philippines town last year.
The Yucatán set the record back in 2010 when chefs cooked up 3094 kilos of cochinita pibil, a local roast pork dish. That record stood until November last year when the Filipino town of Quezon City pigged out with a whopping 4045 kilos. Now the gauntlet is down and 120 cooking students are aiming to bring porcine glory back to the Yucatán during Expocampo Yucatán in March.
