The trend for colourful burgers in Mumbai is making food look really pretty

Who needs a plain old burger bun, when you can brighten up your plate by having them in all colours of the rainbow? India is known for its wonderful colour palette, and this now extends to its burger buns. A trend for gaily-hued buns has become a thing in Mumbai, and it is certainly lending a splash of colour and vibrancy to the humble burger. Beetroot extract gives the red-coloured buns from Genuine Broaster Chicken from Andheri West their colourful hue. There is also a green palak paneer burger available as part of a specially curated menu for vegetarian customers.

The black burger bun from The Rolling Pin café in Lower Parel is called the BBQ Paneer Bun. According to owner Aditya Gupta, it acquires its colour from edible charcoal. He says that this gives the bun a crispy, burnt texture that adds flavour to it.

Tanu Narang, co-owner of The Little Door in Andheri believes that the coating on the yellow and pink mini buns makes them more appetising. Beetroot extracts and turmeric coconut give them their vibrant hues.

Red, white, black or plain ol’ regular brown – you can have your choice of burger bun colours at Barcelos in New Delhi. Barcelos is part of a South African restaurant chain that is famous for its addictive sauces and colourful food items, and its pretty buns certainly liven up the average fast-food meal.
