Regarded for decades as a Surry Hills institution before being relaunched recently, The Dolphin Hotel features three spaces, the Public Bar, Dining Room and Wine room. Each one is decked out to create a unique atmosphere.
Restaurateur Maurice Terzini teamed up with designer George Livissianis and artists Beni Single and Tracy Deep to reuse and re-adapt the existing spaces that were present.“If the elements have integrity they are preserved, if they can be stripped back to raw they are stripped and if they aren’t suitable, they’re wrapped in a Christo-inspired installation process,” explains designer George Livissianis.
As well as Christo, another famous artistic figure that is heavily referenced in the design of the public bar is Keith Haring, whose art took the world by storm in the 1980’s. Bold black and white designs on the furniture make for an obvious homage to the artist and a striking décor for the space.
The intimate area of the Wine Room seats 50 and features neutral hues, textured fabric walls and ceiling, blonde timber banquet seating and warm yellow lighting. It has a kitchen lead by Monty Koludrovic and Head Chef Sam Cheetham. The Wine Room menu features small plates such as Bonito, Octopus, Bone Marrow and Vin Juane with mushrooms while the Public Bar serves up wood fired pizzas and beers.
