Turkey to standardise famous baklava recipe

Turkey is to introduce a formal list of criteria for manufacturers of the traditional baklava dessert after it was found that, in some cases, dried peas were being used in place of ground pistachios, and dried pastry instead of walnuts. The Turkish Standards Institute (TSE) has ruled that Turkish baklava ‘should have its trademark color [golden yellow] and look, its syrup and intensity should not be sharp, it shouldn’t cause a sore throat, and the minimum height of each piece should be 35 millimeters.’ Read more: hurriyetdailynews.com
