Born in Spain of Moroccan parents, chef Najat Kaanache has worked at restaurants such as Noma and travelled extensively in Mexico. Her lovely fine-dining restaurant synthesises her experience into a dazzling, ever-changing tasting menu that highlights transatlantic culinary links (Moroccan mole just makes sense). It's admittedly pricey for Fez, but a bargain next to similarly ambitious global restaurants.
