Behind the swinging doors of a former saloon, 'The Spring' serves fabulously fresh ceviche. It's got a real buzz, also helped by jabanero salsa, the spiciest of chili sauces that will put hair on your chest. Tuesdays is two-for-one drinks, while Thursday offers up two-for-one nibbles.

(Warning: we suggest you don't pile the jabanero sauce on like the hardy locals here, a little goes a long way). Be sure to try one of their ginger margaritas (M$65).
