Baja California

There's more to Baja than Caesar salad and the perfect fish taco (though that's definitely part of its culinary appeal). A food movement that hails from Tijuana, Valle de Guadelupe and Ensenada, Baja Med is Mexican-Mediterranean-Asian fusion. It combines local ingredients, such as fresh seafood and miniature vegetables from Ensenada with olives from Valle de Guadelupe and San Ignacio dates with Asian methods of presentation. Baja Med dishes include tempura tacos, slow-cooked ribs in fig syrup and black mole, and charred octopus and salt-cured nopalito (prickly pear cactus) risotto.
