Bistro in Shibuya & Shimo-Kitazawa

Pignon is a perfect example of where Tokyo's dining scene is going: it's ostensibly a bistro, sources its ingredients directly from producers and has a menu influenced by chef Yoshikawa Rimpei's global travels. In other words, it's laying down local roots, riffing on the classics and chomping on the bit to break free from convention.

Reservations recommended, but go early in the week and you can probably get a seat.
