Thanks to its proximity to the Sea of Japan and a strong heritage of sushi and sashimi chefs, Kanazawa is a great city for experiencing ocean-based haute cuisine. It also has a diverse range of other cuisines. Sublime kaiseki (Japanese haute cuisine) is found in the region's top ryokan. The Noto Peninsula and Toyama are also known for unique and delicious seafood; some pilgrims travel to Toyama just for the spring's white shrimp (shiro ebi).
