Black truffles and wild asparagus dominate menus in Todi during their delightful seasons. Local specialities like pasticcio alla Jacopone (rolled pasta stuffed with ricotta, spinach and served with a mixed ragù) can be found at Ristorante Jacopone (Piazza Jacopone 3); and palombe alla Ghiotta (wild pigeon; requires advance notice) at Jacopone and La Mulinella (Località Pontenaia 29).
