A pig’s whisker from the city’s former slaughterhouse, this old-school restaurant, complete with dated wood-panelled interior, is a long-standing champion of the quinto quarto (fifth quarter – or insides of the animal). Signature dishes include coda all vaccinara (oxtail stew) and rigatoni alla pajata (pasta with a sauce of tomato and veal intestines).
