Food is the surprise highlight of Molise. It's fabulous in that down-to-earth, unadorned and wonderfully simple way you sometimes find in Italy's untouristed interior. You won't encounter any Michelin star restaurants here, but you will stumble upon family-run trattorias using wheat, legumes, lamb, cheese and vegetables (and seafood in Termoli) in the same way they've done for centuries.
