Niçoise chef Annie Féolde applies French techniques to her refined Tuscan cuisine and does it so well that this is the only restaurant in Tuscany to brandish three shiny Michelin stars. Imagine pigeon roasted in a cocoa-bean crust, with a salted-peanut emulsion and black-truffle sauce. The setting is a 16th-century palazzo hotel and the wine list is out of this world.

Dress code for gents: preferably a jacket, and most definitely not shorts and/or a short-sleeved shirt, T-shirt or sweater.
