Chef Hajime Kasuga serves curious flavour combinations known as Nikkei – Japanese-Peruvian fusion food. Choose à la carte ceviche and sashimi or arroz con pato – slow-roasted duck, coriander rice and Japanese pumpkin.
On the set menu, the asado de tira comes with slow-cooked short ribs, watercress teriyaki sauce and wasabi. The cangrejo dish has soft shell crab with asparagus and pomelo, while the vieira apaltada main consists of scallops, avocado, 'tiger's milk' (citrus sauce), black habanero oil and Peruvian corn. The flavour pairings really work.
