Duck, cassoulet, Armagnac brandy and local wines form the bedrock of this region's waist-widening cuisine. Some of the most exceptional restaurants are in Toulouse, along with superb food markets, though Albi also makes an excellent base for gastronomes. Sugar fiends won't want to miss Toulouse's plentiful confectionery shops and bakeries, and Moissac's distinctive macarons.
Despite the controversy it inspires beyond France, foie gras is ubiquitous on restaurant menus in the Toulouse area. At the region's many half-board offerings, travellers sensitive to animal rights may want to ask if foie gras is served as part of set menus (it's an exceedingly common starter).
