The ‘Singer’ (named after the 19th-century Lyonnais socialist singer-songwriter Pierre Dupont) could be a film set, with its curved zinc bar and art-nouveau mouldings dating from 1918. Refreshingly unhip, the food is old-school French and very substantial with mains that range from steak à cheval haché minute (horse tartare) to daube de sanglier (boar stew).
