Artisan, organic flour from traditional millers is used by aptly named boulanger/pâtissier (baker/pastry-maker) Miche Dupain (pain being French for 'bread'). A place-getter in Paris' 'best baguette' award, Miche is also famed for his sourdough loaves, and creates exquisite pastries such as fruit and chocolate ganache tarts, and eclairs.
