Exposed stone walls, leather seating, marble-topped tables and indoor plants (plus a cocktail bar in the vaulted cellar) give Carbón a rustic appeal. Many dishes, such as mezcal-marinated tuna, guinea fowl with quince and hay-infused duck with pontoise cabbage, are smoked over beech wood. Of an evening, choose from tapas-size small plates or large plates for two to four people.
