Jean-Marie Alloin is the chef in charge at La Prévôté's primo – and deservedly popular – restaurant. The food here is modern, and occasionally experimental, but underscored by classic Provençal flavours: aubergines, olive oil, tomatoes, herbes de Provence and so on. You can dine in the old refectory or in the courtyard; both are delightful.
