Super-fresh fish and seafood is landed at ports along the Channel coast.

Flemish dishes are widely available, though both recipes and spellings vary:

  • carbonade – braised beef slow-cooked with beer, onions, brown sugar and ginger bread
  • potjevleesch – jellied chicken, pork, veal and rabbit; served cold
  • waterzooi – fish or chicken stew made with carrots, onions, leeks, potatoes and herbs
  • Welsh – toast and ham smothered with cheese (often Maroilles) melted in beer
