Every February since 1960, Carry-le-Rouet has come alive to Les Oursinades, a multiple-week celebration of the spiny oursin (sea urchin), of which only the lurid-orange gonad is eaten. Oursin-lovers from France and beyond descend over three Sundays of events, performances, dinners, art exhibitions and, of course, oursins by the bucketload
