Sourced from the pure natural landscapes and crystal-clear rivers and lakes, Lappish specialities include wild boar, elk, bear, grouse and, above all, reindeer, which appears on menus everywhere, along with salmon, local lake fish, wild mushrooms, and berries such as lingonberries and cloudberries. Restaurants can be in short supply outside major centres, but most towns have at least a small supermarket for self-caterers.
