Oswaldo has moved from the old van to a more permanent site, but it's still all quinoa, all the time: in burgers ($4 to $5), pudding, homemade sorbet and shakes where you can mix it with other flavors like blackberry, chocolate and passion fruit. The five-juice Cuicocha Lake drink is a surefire hit, but the chocolate liqueur shouldn't be missed.

On sale here is an interesting chocolate-based barbecue sauce, too: its base is cacao honey. The main vegetarian platter substitutes highland potatoes for coastal yucca, because Oswaldo's wife is from Esmaraldas, on the torrid Pacific.
