Try the riverside cafes for a typical dish of ceviche boquetero, which is literally ‘dumptruck ceviche’ – a combination of toasted corn kernels and plantain chips with a can of tuna elegantly dumped on top. Luckily, there are a couple of surprising standouts in town.

Puyo shuts down on the early side, but a glass of wine at Hostal Las Palmas is a great way to while away an evening.
