The classic Latacunga dish, chugchucara (say that 10 times fast!), is a tasty, heart-attack-inducing plate of fritada (fried chunks of pork, served with mote – hominy), chicharrón (fried bits of pork skin), potatoes, fried banana, tostado (toasted corn), popcorn and cheese empanadas. Many cheap leñadores (woodburning ovens) roast chicken along Amazonas between Salcedo and Guayaquil. There are two nice vegetarian options, including Kipi, close to the historic center.
