Birch Juice Ice Cream
If you're looking for a left-field excuse to take the 40-minute boat ride to Skarø (population 37), you could say that you're coming in search of the island's deliciously textured gourmet ice cream. The unique element here is that the base, whether for sorbet, dairy or soft ice, is made with sugar kelp and sap tapped from the island's birch trees. The producer, named simply Is fra Skarø (www.isfraskaroe.dk), runs a summer ice-cream cafe. To build up your desire for a second helping, you could then go and climb Skarø's 'mountain' Vesterbjerg, which towers 9m above sea level.
