Koji Hyodo's sushi shack is a twinkling beacon of fresh, raw excellence. The atmosphere and service are superior, of course, but his food is a higher truth. The grilled octopus is barely fried and sprinkled with sea salt; there's a sweet crunch to his lobster sashimi, sliced tracing-paper thin and sprinkled with fresh ginger.

It's 2km north of Florblanca. If you cross the bridge, you've gone too far. Reservations recommended.
