West Lake Spring

A mural of the Sū Causeway crossing Hángzhōu‘s West Lake greets you as you enter this classy restaurant. The 11th-century creator of the causeway, Sū Dōngpō, also gives his name to dōngpō ròu (东坡肉), the unctuous pork-belly dish rendered expertly here. As is the lóngjǐng xiārén (龙井虾仁; shrimp with Lóngjǐng tea) and other classics of Zhèjiāng cooking.
