Mongolia’s notable culinary contribution is huǒguō (火锅; hotpot), a refined version, so the story goes, of the stew originally cooked in soldiers’ helmets. Yángròu (羊肉; mutton), miàn (面; noodles), dòufu (豆腐; tofu), mógu (蘑菇; mushrooms) and other veggies are added to the bubbling cauldron, then dipped in sesame sauce and devoured. It's sweltering fun, very addictive and excellently rounded off with a line of chilled beers.
