Chef Lorna does some wonderful things with the natural bounty of Manitoba, drawing on the different ethnic influences of this multicultural state. Expect white truffle pierogi with walnut sauce, smoked Arctic char with pickled fiddleheads, and bison steak. Lunch is a more casual affair, with elk burgers, vegan salad and a refined take on the corned beef sandwich.
