Esteemed Sydney chef Peter Conistis' first venture south of the border is within Geelong's heritage bluestone customs house on the waterfront. He brings his signature modern Greek menu, heavy on seafood and big on local produce: don't miss the slow-roasted lamb cooked in baked clay, which staff theatrically crack open at your table, or the chargrilled octopus with creamy almond skordalia.
