Cash is your best bet; credit and debit cards are not accepted anywhere and although travellers cheques can be cashed in a few places in the capital, they are never accepted as payment. If you carry foreign currency, euros are the easiest to change - and often the only option outside the capital. It is also becoming easier to change US dollars, though it's not a sure bet. Hotels sometimes accept euros, but rarely US dollars. If you do need to change money try to do so in Bissau as there are few banks outside the capital.
Foreigners and wealthy locals are expected to tip about 10% in mid-range and top-end hotels and restaurants and privately hired taxis.
