Here you’ll find Chef Eduardo Castañeda’s healthy-ish takes on his country’s dynamic cuisine, from a Trinidad- and Tobago-influenced curried shrimp wrapped in roti to upscale tequeños , a local staple of bread dough stuffed with white cheese.
