We're flummoxed why in 2013 James Beard dubbed State Bird America's best new restaurant. Yes, the food is thrilling, a play on dim sum, wildly inventive with seasonal-regional ingredients and esoteric flavors like, say, fennel pollen or garum, but the open-kitchen-dominated room is downright drab and so crowded that parvenu foodie-hipsters without reservations stand to eat, blocking the door.
If you're curious to see the Emperor's new clothes, book exactly 60 days ahead, or arrive by 5pm for a coveted walk-in, stand-up spot. Prices are deceptive; all those small plates add up.
