   The snowball (shaved ice with flavored syrup) is New Orleans’ favorite dessert, and Hansen’s, in business since 1939, may be New Orleans’ favorite ball. Founder Ernest Hansen, who passed away after Hurricane Katrina, patented the shaved ice machine, and his granddaughter, Ashley, runs the family business, doling out shaved ice covered with syrups in flavors from root beer to cream of nectar.
