Acme Chop House
Once again chef Traci des Jardins, of Jardinière fame, has hit one out of the park - specifically SBC Park, which is right next door. Acme keeps sports fans and environmentalists happy with a clubhouse atmosphere designed with green building principles in mind, from the recycled cork floors to certified sustainable mahogany tables buffed to a handsome bar finish with non-toxic wax. Unlike certain ballplayers, Acme's organic steaks and chops are strictly steroid-free.
The sustainable petrale sole offers non-red-meat eaters a delectable alternative, and on the offchance you leave any scraps, rest assured it will be composted.

The only ingredients on chef Maria Hines's menu that aren't organic are those found in the wild, like mushrooms and seafood. Everything else, from asparagus to cheese, is carefully selected to meet certified-organic standards and prepared in a manner that preserves its essence. Try the mini duck burgers, made with the first organically raised ducks in Washington. Servers in the small restaurant are unpretentious and friendly, and will gamely answer any questions about the food or wine. Reservations are recommended; there's also a small bar in the corner.

Whenever possible, this trendy bistro’s ingredients hail from local organic sources, but the chef draws inspiration from all over, notably Asia and the Southwest. There’s a constantly changing ‘market menu, ’ but for the most rewarding experience, share several of the small plates for dinner, like the smoked duck nachos or the prosciutto Americano crostini. Reservations recommended.

Nasturtium takes nourishing its clients so seriously that a mission statement is posted at the entrance. Only hormone-free animal proteins and organic produce are used to create soups, salads, sandwiches and wraps with a gourmet touch. The fresh island fish quesadilla with chevre and pineapple salsa is divine, as is the organic gingered macadamia-nut tart. It's between the 112- and 113-mile markers.

JT’s Island Grill & Gallery
Just a mile or so past the edge of town, this awesome café-cum–art gallery sits in a restored 1890 general store. It’s outfitted with bright, retro furniture and piles of kitschy books, pottery, clothing and maps (all for sale). But the best part is the food (lunch only) – fresh crab cakes, salads, fish platters and veggie wraps, made with locally grown organic vegetables.

Windows on the Water Restaurant
Just south of the bridge, this award-winning restaurant offers creative, largely organic seasonal fare. Coriander seared ahi tuna, wild shrimp and lobster ravioli and parmesan crusted rack of lamb are a few of the recent temptations offered in the attractive riverside spot. Several times per year, it offers a three-course cooking demonstration (per person $50) hosted by chef John Hughes.

Chic and health-conscious, this café runs with an entirely different crowd than your average mess hall. Set in the courtyard at the historic Julia Morgan-designed YWCA, the café has a changing menu committed to local and organic (when possible) ingredients. And because Honolulu has never heard of pretension, the upscale meals are close to down-home prices.

Hana Ranch Restaurant Takeout
Busiest spot in town, and for good reason. Everybody comes for the mammoth burgers made of free-range Hana cattle - it doesn't get any fresher than this. Vegetarians aren't left out either; the taro burger offers a slice of Maui before ranching took hold. Good breakfast fare and plate lunches, too. Oh, and did we mention the ocean-view picnic tables?

John Andrews Restaurant
Chef Dan Smith turns out organic mountain lamb, a daily risotto and a fine Italian/New American menu with most items grown on nearby farms. The place occupies a clapboarded 19th-century home overlooking a garden. Prix-fixe specials on Thursdays are absolutely worth the 6 mile trek west from Great Barrington. Good wine selection.

Opposite the 'Ulupalakua ranch headquarters, 5.5 miles south of Keokea, this store has a deli and lunchtime grill featuring the ranch's hormone-free beef and elk burgers. The store also sells cowboy hats and souvenir T-shirts. Say howdy to the life-sized wooden cowboys on the front porch carved by a former ranchhand.

You'll find a local crowd at this hidden gem set back from the road opposite Hana Ballpark. It's little more than a lunchwagon, but it serves café fare on par with Maui's finest, including organic salads, scrumptious carrot-coconut soup and foamy lattes.
