The home base of celebrity chef David Bouley attracts an un-flashy crowd of heavyweights who drop small fortunes on sublime, creative takes on classic fare – like seared halibut with purees of persimmon and cauliflower and a trickle of almond-milk sauce, or tea-smoked organic duckling with vanilla-glazed baby turnips. Dinner tasting menus let you sample six courses of treasures for $95, or $175 with wine pairings.
