Health-conscious, Michelin-starred Rouge Tomate puts the sexy in sustainable. To retain their maximum nutritional value, the mostly local, seasonal ingredients are never fried or grilled. This seeming limitation is no obstacle in creating complex, sophisticated marvels like fleshy, textured eggplant tartare with garlic confit.

There's an exceptional offering of organic and biodynamic wines, swilled by a slinky, sharply dressed crowd pulled straight off the Sex and the City set. The three-course, $32 'Business Lunch' is good value, and it's always wise to book three or four days ahead, especially if heading in Tuesday to Thursday. No booking? Head in early and try your luck at the bar.
