Chef-owner Peter Merriman's Waimea namesake has long wowed diners with creative use of organic, island-grown ingredients. Today there are four sister restaurants and his original flagship might be slipping. But it's still the best fine-dining spot in town. The ponzu-marinated mahimahi, wok-charred ahi and crispy molten chocolate 'purse' are classics. Lunch offers good value.
