Chef-owner Peter Merriman's Waimea namesake has long wowed diners with its creative use of organic, island-grown ingredients. Today there are four sister restaurants anchored by this, the original flagship. It's still the best fine-dining spot in town. The mahimahi marinated in ponzu (Japanese citrus sauce), wok-charred ahi and crispy molten chocolate 'purse' are classics. Lunch offers good value.
