Lonely Planet review for Pizzeria Uno

Ike Sewell supposedly invented Chicago-style pizza here on December 3, 1943, although his claim to fame is hotly disputed. A light, flaky crust holds piles of cheese and an herb-laced tomato sauce. The pizzas take a while, but stick to the pitchers of beer and cheap red wine to kill time, and avoid the salad and other distractions to save room for the main event.

    The Fundamentals of Chicago Style

    Close your eyes and picture a very special crust. More like the crust on granny's apple pie than something someone has been tossing into the air. This crust is flaky, buttery, deep, and yet strong enough to act as a foundation for the best pizza you may ever have.

    Now picture an obscene amount of cheese. We're not talking a thin layer of the stuff. We are talking if you were a miniature action figure, you could easily dive in and swim in this stuff. If you didn't get stuck. Or sink and meet your cheesy demise. (At least you would go happy.)

    Next, the sauce. And this may shock you. Only the adventurous need continue reading: the sauce comes on TOP of the pizza. Yep, it's a little role reversal at play at Unos. The fact that this sauce flaunts itself proudly on top of the pizza, contained by said beautiful crust, allows for more of this heavenly concoction to exist on your pizza. And this ain't no ragu thick and chunky, this is tomato bliss. Something fresh and heavenly. I think it involves garlic.

    These three elements exist in delicious harmony creating the phenomenon that is Chicago-Style pizza. Others may claim to offer Chicago Style, but accept no imitations. Chicago pizza was born and is thriving at Pizzeria Uno. And if Pizzeria Uno is too packed, head for Pizzeria Due, only about a block away. They are the same guys.

    I came here expecting the standard Uno experience - indifferent service; greasy, gloppy pies; overpriced drinks. I came away impressed. The pizzas at the flagship Uno restaurant are much lighter, flakier and more flavorful than their counterparts at non-Chicago outlets.
