Inspired to move to Chicago by a book by Charlie Trotter, Bowles’ spent time in the kitchen at Tru before working atop the Peninsula Hotel at Avenues. His prix-fixe menu, including the 20-course Chef’s Palate menu that runs over $250, has created quite a stir and earned him a place next to his former role model.
