Çınarlı
Resisting the passage of time, the Çınarlı still enjoys a great reputation for its yöresel yemeks (traditional dishes), a perfect excuse to experiment with lesser-known dishes such as ekşili ufak köfte (small sour meatballs), yuvarlama (chickpea, meat and yoghurt soup) or kuruluk dolma (spicy stuffed aubergine). The decor works a treat, with three small rooms decorated with rugs, weapons and other collectibles, as well as a bigger dining room upstairs where you can enjoy live music in the afternoon. It's a pistachio's toss from the war memorial (walk down the stairs).

Metanet Lokantası
Tucked away in a side street near Kozluca Camii, the Metanet has always been a local favourite. The kitchen staff conscientiously mince the succulent lamb in front of a big grill, ayran (yoghurt drink) is served in a tin bowl, and the atmosphere is easygoing and convivial. Metanet is also a top place to try beyran, a breakfast and lunch dish popular in Gaziantep.

Located in the restored Şıra Hanı, Sahan dishes up excellent versions of local specialities. It's licensed, so at the very least pop in for a beer, wine and a few meze in the elegant and spacious courtyard.

Yörem Mutfağı
What began as a simple eatery feeding nearby office workers has morphed into an elegant spot serving some of Gaziantep's best homestyle food. Good value lunches are a pick-and-point affair – the dishes change daily – and dinner is more formal with a wider range. Look for the AK Parti sign on the street skirting the northern edge of the Atatürk Kültür Parkı, and turn right down the street before the sign.

Ultrafresh fruit juices are the deal in this buzzing hole-in-the-wall, so put some bounce in your step with a glass of atom (an explosive mixture of milk, honey, banana, hazelnuts and pistachio) or şalgam, a bitter but refreshing drink made from root vegetables, garlic and hot peppers. Set in a converted old house, this mellow place feels light years away from the grinding pace of Gaziler Caddesi and time-warps you back to the past century, with dark wood furniture, cushions and wooden beams. Foodwise, it focuses on simple meals, such as salads, chicken dishes, appetisers and grills. There's live music every evening. Yes, it's licensed!

Çulcuoğlu Et Lokantası
Çulcuoğlu's kebaps are the way to go, but the grilled chicken is also great. Don't be fooled by the unremarkable entrance, as there's a dining area at the back. It's tucked away down a narrow side street across the otopark near the Şıra Hanı, about 20m from a little mosque called Nur Ali.

The Çağdaş family's pistachio baklava is delivered daily to customers throughout Turkey. The secret of their success is fresh, carefully chosen ingredients, and also good are the creamy, chargrilled aubergine flavours of their ali nazik kebap. The restaurant is very popular with Turkish tourists.

Hmm, will it be çoban salata (salad), altı ezmeli (a stew with tomato sauce served in a clay pot) or ali nazik (aubergine puree with yogurt and ground meat)? Set on the edge of a leafy park, this widely acclaimed venue serves savoury fare in seductively cosy rooms complete with cushions, low tables and old artefacts. It's also a good place to puff a nargileh (water pipe). Alas, it's not licensed - there's a mosque nearby.

It's the setting that's the pull here; an enchanting leaf-dappled outdoor terrace at the western end of the 100 Yıl Atatürk Kültür Parkı (about TL10 by taxi from the centre) perfect for escaping sticky Gaziantep on a hot summer day. Good choice of mezes and meat dishes, and you can order beer, rakı or wine.

This central hole-in-the-wall would be a mere blip on busy İstasyon Caddesi, were it not for its well-executed chicken sandwiches and melt-in-your-mouth gözleme (savory pancakes). If the weather permits, grab one and walk down the street to the 100 Yıl Kültür Parkı.
