5I wouldn't count on bike rental places or beach cafes being open on Christmas Day. In part, cause it's winter. And also, Christmas.
In Santa Monica, the only places I predict being open as delis like Izzy's (Wilshire & 15th) and cheap Mexican or Chinese food - nothing beach close comes to mind. Maybe some Japanese restaurants on Sawtelle. There is a skating rink near the airport - Toyota Ice Center in El Segundo - another maybe on being open.

7You'll be stuck with your carryons. Best thing to do would be to rent a car for the day, which probably would be cheaper than taxis and would enable storage of your stuff.
LAX is not far from Santa Monica and Venice, as well as other beach areas. LA can be gloomy and relatively cold at Christmas, so you mi9ght consider less outdoor stuff. You easily could tour around Malibu, the Westside, Hollywood, the beach areas S of LAX, Mulloland Drive (which has views and hiking trails), i.e., any number of things. the traffic won't be heavy, so you could cover a lot of ground.
