1As a resident of Reykjavík until recently, I'm new to the hotel circuit there, but I did stay in the third one (Reykjavik Residence Suites) in May this year and I was very impressed. The room was beautiful and had nice local touches to the decor, and having the breakfast already in your room's mini kitchen means you can snack whenever you want and have as much coffee/tea as you feel like while wearing your bathrobe. They provided enough to make a basic lunch too.
Borg is a more could-be-anywhere style hotel, and given how compact the town is I don't think it'd be worth the extra money. It is located on a square full of bars so I'd imagine it might be a bit noisy.
Not sure about the third option you mention but of all of these I would definitely pick the Reykjavik Residence apartments. If it weren't so expensive I'd choose to stay there again myself on my next trip to town.
