Help with good Andean tours in Ecuador

Help with good Andean tours in EcuadorHi,
I'd love to get some advice... I'm travelling to the coast of Ecuador in October for a workshop and was planning to do some travelling around the country for a few weeks after with a friend but sadly she has had to pull out. I still really want to explore Ecuador but as a single woman I'm not really comfortable travelling by myself so I've been looking for a really good tour I can join from the 16th October - 2nd/3rd November that won't rush me round the country at breakneck speed, but rather allow me to see some great places (not just the major tourist spots) with some good activities and excursions (I love horse riding, so including that would be great!).
As I'll be travelling by myself the other main appeal of the tour is to meet some new people. I'm 28 so it would be great to meet some people around a similar age. So far any tours or courses (such as travelling Spanish classes) I've found are either one-to-one individual tours, or packages where I join different local tours day to day depending on which town or city I'm in.
I'm mostly interested in being in the Andes, the avenue of volcanoes, the thermal springs etc from north to south. I'm not going to go to the Galapagos as this seems to add quite a lot on to the cost of the trip and I'd rather spend my time on the mainland. I'll already have visited the coast and I'm also not that interested in spending much time in the Amazon.
Can anyone offer any advice of good tour companies and experiences?

1My advice would be to contact Metropolitan Touring as they're based in Ecuador, have an English-language website, and deal with tens of thousands of foreigners successfully each year. I've traveled with them before (as a journalist) and had great guides. Just tell them your wants and see what they come back with.

3If you want to stay in the Andes you can take a share service(Tour), it means that you can visit the Otavalo Market or Cotopaxi Volcano(Full day) with other passengers and the price is convinient.

5Floribelle, just wanted to chime in that I have been traveling around by myself for a month now (female, 59 yrs old, backpack) and it has been great. I have not used tours but the city-to-city buses here are a good way to get a chance to talk with local people on long trips and you get to set your own schedule and be impulsive. I will be heading down south to Loja from Cuenca and on to Vilcabamba and then ?? this Saturday (Oct 5) If you are in the area and want to see the southern part of Ecuador I would be up for a hiking partner in some of the parks.
